Malibu Chicken

I've been revisiting some of my old favourites lately.

Food wise that is.

And one dish I used to make a lot was this, Malibu Chicken.   I know it was on the menu at Sizzlers, but I don't think I ever ate it there.  We went there for the all you can eat ribs, or as they say in the south, AUCE.    And the salad bar.  
 
For some reason I haven't made it in a yonks age.
What is a yonk anyway?

Doesn't matter, what does is that it has literally been years since I made us Malibu Chicken for dinner, years and years and years.

Way too long for something this good.

 Recipe:  Malibu Chicken  Serves 2-3 people

2-3 Chicken Breasts sliced into cutlets (make 4-6 cutlets)
1 1/2 cups Panko Bread Crumbs
1 cup flour
1 egg
1/4 cup water
1/4 cup instant potato flakes
1 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper
1 teaspoon Healthy Solutions Pork and Poultry seasoning
or
1 teaspoon poultry seasoning
2-4 tablespoons vegetable oil for frying
8-12 thin slices of Ham (deli ham works great for this)
4-6 thin slices of Swiss cheese
Mustard Sauce:
2-4 tablespoons mustard
2-4 tablespoons mayonnaise
Whisk the mustard and mayonnaise together and set aside to serve with the chicken.

Mix the seasoning into the flour,
then take 1/4 cup of the seasoned flour and add to the Panko bread crumbs along with the 1/4 cup instant potato flakes.
Whisk the egg and water together and set aside.
Make a dredging station with the seasoned flour, the egg and the Panko bread crumbs in separate bowls.
Cut the chicken into cutlets
and then dredge the chicken into the seasoned flour first,(which means dipping the chicken into the flour and coating it, then shaking off the excess flour)  then into the egg
and finally into the Panko,
pressing down into the Panko and coating both sides. Heat the oil in a shallow fry pan until it starts to glisten a little then add 2-3 of the cutlets and cook until golden brown on both sides and cooked in the middle.   Place on an oven proof pan or rack and place 2-3 thin slices of ham on each cutlet and then place a slice of Swiss Cheese on top.
  Place into a hot oven, 375 degrees until the cheese is melted. 
Serve with Mustard Sauce and your choice of sides.
I like the Sauteed Swiss Chard with them myself.
